What Does a Two-Michelin-Star Chef Do Next? He Comes Back to Rockwell.
Word had spread fast: Chef Josh Boutwood is back in Rockwell, and eager diners have been flocking to Osteria since its doors reopened just a week ago.
For a limited run until June 28 at Balmori Chef’s Table, Chef Josh revives his much-talked-about Italian pop-up, Osteria, bringing back the dishes that made last year’s residency one of the city’s hardest reservations to score. This time, however, he returns with even greater acclaim as the only chef in the Philippines to hold two Michelin stars—an honor he earned for his restaurant, Helm.
Yet despite the global recognition, Chef Josh speaks of Osteria’s second stint with less fanfare than familiarity. “It’s almost refreshing to be back at Balmori…to my home turf,” he says, settling once again into the same space where his soulful Italian cooking found a loyal following.And judging by the packed tables and returning diners, Manila clearly missed it.
For Osteria’s return, Chef Josh admits he became more critical of the menu, knowing how strongly guests loved the original dishes. The goal was simple: bring back the crowd favorites while gradually introducing new additions weekly to keep regulars coming back.
Back by Popular Demand
What exactly are these missed favorites? Chief among them are the Chilean Mussels. As Chef Josh describes it, the Mussels are “cooked down with the Calabrian ’Nduja, with a nice chili to it,” creating a sharp, savory broth specifically meant to be soaked up by the signature The Test Kitchen Sourdough Bread served across all his restaurants.
Then there is the unexpected star of the menu: the Radicchio Salad. Despite the leaf’s intense natural bitterness, Chef Josh found a cult following for it. “We pair it with rich Italian gorgonzola and wild honey to beautifully balance those bitter notes,” he explains.
At Osteria, pasta remains the undeniable heart of the menu. One cannot miss the revival of the Rigatoni, tossed with savory fennel sausage and a velvety mushroom cream sauce and a classic Lasagna featuring layers of handmade pasta, braised beef, rich béchamel, and cheese.
Moving on to the mains, the menu features dishes designed for sharing. The Pork Cotoletta offers a generously portioned breaded pork chop, finished with lemon and a touch of sea salt. For those seeking a lighter alternative, the Barramundi al Forno features roasted sea bass with olive oil, sea salt, and confit olives for a bright, clean finish.
“In any of my restaurants, it is imperative to end on a sweet note,” Chef Josh says. Guests can look forward to the Pane Budino—a classic English bread pudding with an Italian twist, soaked in Marsala wine and raisins. The luscious Pannacotta paired with blood orange syrup and roasted pumpkin seeds is also a must-try.

The Culinary Lineup: From Handcrafted Stacks to Street-Style Tacos

Tactile Art and Analog Memories

When a restaurant built on fire, finesse, and fearless creativity steps into one of the city’s most coveted dining stages, something special is bound to unfold.
From February 6 to March 22, Michelin-recognized GOXO— the intimate 12-seater Bar Asador from Grupo Pintxos— makes its debut at The Balmori Suites Chef’s Table, inviting diners into a limited-time journey through Basque-inspired cuisine shaped by Filipino ingredients, global influences, and the vision of Chef Albert Mendoza.
From Grupo Pintxos to GOXO
“We took the ‘Bar’ from Bar Pintxos and ‘Asador’ from Txoko Asado and merged them into one single identity—and that gave birth to GOXO,” he explains. “What we bring here in The Balmori is that same creativity, the same passion, the same playfulness—guided by Basque cooking techniques.”
At The Balmori, that philosophy translates into an immersive dining experience where technique never overshadows ingredient, and where restraint becomes a form of luxury.
A Rare À La Carte Chapter
Known for its prix fixe tasting format, GOXO takes on a new rhythm at The Balmori with a full à la carte menu—a first for the restaurant in such a large-scale setting.
“This is the first time that GOXO will be there for customers to experience our à la carte dishes in this way,” says Chef Albert. “These are some of our best-sellers from previous menu series—so we’re very confident bringing them here.”
With nearly 50 seats to fill each service, the Balmori pop-up challenges the team to expand GOXO’s intimate style while keeping its meticulous standards intact.
The Menu: Where Basque Technique Meets Filipino Ingenuity
At the heart of GOXO’s Balmori run are dishes that showcase Chef Albert’s gift for transforming tradition into something unexpected yet deeply satisfying.
One standout is the Jamon Talakitok, GOXO’s pescatarian take on Spanish cured ham. What began as an accident in the kitchen—an over-cured local fish left in the chiller—turned into one of the restaurant’s signature creations.
Another highlight is a refined Hamachi Sashimi, layered with Filipino nuance: fresh mustasa standing in for wasabi, and a roasted anchovy jus replacing soy sauce, bringing saltiness and umami into perfect balance.
Simplicity Meets Excellence
At GOXO, every ingredient takes center stage. “There’s a certain parallel between Japanese and Basque cuisine. Both focus on letting ingredients shine,” says Chef Albert. In the Philippines, this philosophy meets local produce, resulting in dishes that are elegant, balanced, and full of flavor.

- The electronic raffle draw for the 30 Thrills of Christmas will be done daily at 6:00PM. The winners shall be notified via phone and email. The winners will also be announced daily on Power Plant Mall Instagram Stories, and weekly on the Power Plant Mall Facebook Page.
- To claim the prize, the winners shall present a valid I.D. (Driver’s License, Passport, National I.D., etc.), and the email confirmation at The Rockwellist Christmas Raffle Concierge area, located at the R1 Level (near Rimowa), to be assisted by the Rockwell Raffle Tellers.
- In the event that the winner cannot claim his/her prize personally, an authorization letter must be provided for the receiver, along with a photocopy of the winner’s valid I.D. upon claiming the prize.
- The winner has sixty (60) days to claim the prize from receipt of notification. Otherwise, this will be forfeited.
- The redemption period shall be within sixty (60) days from receipt of notification.
- The prize is not transferable, and not convertible to cash.
- Customers can only win once during the whole promo duration.
- The winner shall allow himself/herself to be featured in any, and all publicity materials connected to the promo.
- Upon joining the 30 Thrills of Christmas and/or the Elite Promo, the shopper explicitly authorizes Rockwell Land Corporation to process personal information and sensitive personal information in the performance of the promotion.
